Australian Baking Business wishes Brett Noy well as he represents Australia at the upcoming World Bakery Masters in March.

This will be the first time Australia is represented at this event, which is at the pinnacle of the international baking competition calendar.

Only the top performing bakers who took part in the 2009/2011 Louis Lesaffre Cup and the 2012 Coupe du Monde de la Boulangerie have earned a spot in the Masters. In total, 24 competitors from 18 countries – including Algeria, Brazil, Indonesia, Morocco and Senegal – will go head-to-head in their specialist category: bread, Viennese pastry, or artistic piece.

Brett will be coached by Southern Cross Baking Group co-founder Will McPhail, who was part of the Australian contingent that placed third in China in 2011. Southern Cross Baking Group is the major sponsor behind Australia’s efforts at the competition.

The event, which will be held in France, will require Brett to produce eight doughs in an eight-hour period, using preferment methods. All competitors must use flour and equipment provided by the organisers, and are given only two before their competition to familiarise themselves with their environment.

In addition, they will draw one of six required additional doughs that must be completed during the time frame.

“The last few weeks have been very hectic but we are ready to go and looking forward to the challenge,” Brett says.

“I was fortunate enough to have been able to spend a week training at Hamilton TAFE in Newcastle in late January. Thank you to Lo and his team for making their fantastic facility available.”

Brett was given an official send off on January 30 with Mayor of Redland City Karen Williams attending to show her support.

After flying to Paris in late January, Brett is currently residing in Brussels, Belgium, where he will train in the lead up to the competition. The World Bakery Masters will be held during the Europain Show, from March 8-12, at Paris Nord Villepinte, France.
