WHAT YOU NEED
GROUP 1
2000g Beef Mince
GROUP 2
210g Taco seasoning
920g Salsa (mild)
250ml Water
180g Onion
460g Corn kernels (drained)
GROUP 3
800g Canned black beans (drained)
520g Cheese (grated)
200g Corn chips (crushed)
GROUP 4
100ml Water
60g EOI Pie Time
WHAT TO DO
Place the beef in a pot and bring to the boil. Drain off liquid.
Add Group 2 ingredients to Group 1 and simmer for 3 minutes.
Add Group 3 ingredients to the pot. Don’t crush the beans when mixing.
Mix together the Group 4 ingredients and then add to the beef mixture until thickened.
To make the pastry top
Make up in the usual manner. Alternatively, you can use EOI Ready-To-Use Puff Pastry 1x10kg roll or 2x5kg rolls.
To make the pie bottom
Make up in the usual manner. Alternatively, you can use EOI Ready-To-Use Pie Base 1x10kg roll.
Make-up procedure
Once filling is cooled, fill pie bottom. Then top with puff pastry, egg wash and then punch a vent hole in the top of the pie. Add some crushed corn chips or a whole corn chip sticking in the top of the pie.
Bake at 220°C for 20 minutes
