EOI Ready-to-use Unbaked 4’’ or 7’’ Pastry Shells

For the apple filling

Group 1

1400     Pie Apple
500     Water

Group 2
G/ML    INGREDIENTS
250       Caster sugar
60         M.A.P.S Instant Starch

TOTAL WEIGHT: 2210G

For the crumble topping

GROUP 1
G/ML    INGREDIENTS
330       Plain flour
330       Caster sugar
330       Desiccated coconut
280       EOI Monarch
8           Cinnamon

TOTAL WEIGHT: 1278G

WHAT TO DO

For the apple filling
Place Group 1 ingredients in a suitable dish.
Blend the Group 2 ingredients together and then add to Group 1 and mix well.

For the crumble topping
Blend or process Group 1 until combined (fine breadcrumb look).

To assemble
Par-bake the unbaked EOI 4” or 7” shells on 190°c until lightly baked. With the filling above, fill the shells with the apple filling then with the crumble topping mixture.

Finishing instructions
Sprinkle cinnamon on top of apples.

Baking
Bake in a moderate oven 180°c approximately 25 minutes or until golden brown.
