On July 4, Calle Bakery quietly opened the doors to its second location in Northcote, Victoria, marking a significant expansion for the family-run business known for its wildly popular croissant wheels and inventive pastries.
Unlike the original Carlton North bakery that has drawn near-constant lines since 2022, the new site operates more as a production and supply hub—though customers can still grab select pastries, including cinnamon scrolls unique to the new space.
The expansion comes after three months of intensive preparation. In a statement shared via social media, the Calle team reflected: “From the moment we picked up the keys to now, our family and team has poured every ounce of energy into bringing this space to life. We’ve mixed the doughs, tested the ovens, perfected the pastries, and built something we’re truly proud of.”
Led by head baker Huey Phung—whose pastry expertise spans more than 25 years, including a decade at Breadtop—the team continues to produce fresh crescent-shaped croissants, sourdough, and their signature croissant wheels.
Each weekend, new wheel flavours debut exclusively from Friday to Sunday, often reflecting family input gathered during weekly dinners. Daughter and social media manager Chloe Phung shared that inspiration comes from family chats around her grandmother’s table.
The Northcote location preserves much of Calle’s heart and identity, but with added space to accommodate growing demand.
“This new bakery is an extension of our first love in Carlton North. The same heart, just a little more room,” the family shared online.
One key feature of the Northcote site is its exclusive cinnamon scrolls, made from brioche dough and finished with cream cheese frosting.
On opening day, the team gave away 100 free scrolls and sold an additional 200 by close.
