Tokyo Lamington founders Min Chai and Eddie Stewart have announced the launch of their newest business – Everyday Creamery.
The new business marks Min’s return to ice cream after years spent immersed in the land of baked goods.
For Min, ice cream has always been more than frozen dessert. As the founder of N2 Extreme Gelato Min pioneered liquid nitrogen gelato in Australia and helped transform it into theatre.
In 2018 Min and Eddie relocated to Tokyo, where they opened N2 Brunch Club, which helped pave the way for Tokyo Lamington.
“After years of focusing on lamingtons and building Tokyo Lamington from a park bench conversation into what it is today, it’s time to get back into ice cream,” Min said.
Everyday Creamery will focus on classic flavours done perfectly. Think vanilla, chocolate, strawberry, matcha, affogatos and matcha-gatos.
“This isn’t about being extreme or over-the-top, it’s about making ice cream that fits into your everyday life. The kind of cold treat you crave on a Tuesday afternoon. The cone you share with a loved one on the walk home,” Min said.
Everyday Creamery is set to open its doors on November 29, and will be located behind Tokyo Lamington.
