Le Cordon Bleu Melbourne alumna creates revolutionary notebook

After completing her Certificate IV in Patisserie at Le Cordon Bleu Melbourne, Valentina Ricchi was experiencing the all too common struggle of preserving her recipe notes and ideas when they were combined with the rigors of kitchen life.

Valentina decided to solve this problem, and developed the Noted, Chef –  a durable fire-resistant, waterproof tool that is made with stone paper derived from crushed stone and non-toxic resin.

Valentina, 33, designed and brought to life the notebook that has the capacity to withstand spills, stains and tears.

“This eco-friendly alternative to traditional paper is not only sustainable, but practical for kitchen use as it repels liquids and is easy to clean,” she said.

Noted, Chef has only just been released to market, however Valentina said she already envisions it expanding beyond Australia and into the European market in the next five years. A broader range of products is also currently in production to aid professional chefs and home cooks alike.

Valentina originally hails from Italy, and moved to Australia with the ambition of pursuing a career in marketing and advertising. However, she soon found her calling in the world of pastry and enrolled at Le Cordon Bleu’s Moorabbin campus.
