
Two Pastry Lamination classes have been announced for industry professionals.
Organised by Pepe Saya, the classes, set to be held in Adelaide and on the Gold Coast, will see ex Sonoma and Abbot and Kinney baker Jonny Pisanelli demonstrate how to make the perfect croissant.
Open only to industry professionals, in each masterclass Jonny will work through how to laminate to perfection starting with making the dough, lamination with Pepe Sayer butter, proofing and the final bake. The masterclass will also include a demonstration of the machinery, cost saving techniques, and the perfect ratio for flavour and efficiency.
The next masterclass will be held at The Bread Social’s headquarters on Queensland’s Gold Coast on June 11. The second masterclass will be held in Adelaide on June 18.
