Eclair at the Bay co-owners Pavel and Mary have announced the patisserie will be relocating to Brisbane in 2026

Byron Bay-based patisserie Eclair at the Bay has announced it will be relocating to the northern Brisbane suburb of Newstead early next year.

What became five years of booming business at the bay began as a humble pandemic home-delivery and market service by co-owners Pavel Stolarsky and Mary Martin.

Michelin-trained pastry chef Pavel first shot the patisserie to fame with his modern twist on choux pastry, a traditional French dessert that took the local foodies by storm.

Soon after, behind-the-scenes videos of Pavel’s pastry making posted to social media gathered him a fanbase that extended far beyond the northern New South Wales coast.

Plans to transport the patisserie to Commercial Road at Newstead’s old Cake & Bake site will see the shop acquire a brand-new production facility and larger retail space, meaning more customers can tuck into the sweet treats from early 2026.

Speaking with indailyqld.com.au Eclair at the Bay co-owners Pavel and Mary said the move north felt like a step in the right direction.

“Brisbane feels like the natural next step for us,” they said.

“We can’t wait to open our doors, share our desserts with the community, and continue creating modern, memorable pastries that bring people together.”

The patisserie will continue to sell its sought-after treats, ranging from tarts and eclairs to gluten-free mousse cakes, craquelins and croquembouches, as well as personalised wedding, birthday and corporate goodies.

What’s more, the Newstead store’s extra space will allow the team of talented bakers to experiment with some new sweet flavours.

The move north means that Eclair at the Bay’s original storefront will close, but Mary and Pavel invite their Byron-based fans to get their final sweet fix at the bakery’s ‘Farewell Weekend’ from November 29 to 30.

“Byron shaped our story, and Brisbane is the next chapter,” Pavel and Mary told indailyqld.com.au.

“From home deliveries and market stalls to our first shop – and every wedding, birthday and celebration in between – we’re so grateful to the community who supported us. This move isn’t the end; it’s the beginning of something even sweeter.”

The official opening date of Eclair at the Bay’s Newstead store is set to be announced in early 2026.
