A new patisserie has recently opened in Swanbourne, Perth. Whisked the Right Wei is the creation of Deric Fong, known as Wei, who opened the business at the end of last month.

The new patisserie is especially meaningful as Wei, as it is located in exactly the same place as the bakery where his career began—Choux Café run by celebrated pâtissier Emmanuel Mollois.

“When I worked here, I was just a beginner apprentice, and I used to worship him,” Wei told Perth Now.

“When I applied for the job, I didn’t know that he was a celebrity chef in Australia. I found the job in the newspaper.”

The opening of Whisked the Right Wei is especially poignant for Wei given the death of Emmanuel Mollois from bone cancer in 2017. Emmanuel was more than just a boss for Wei, taking him under his wing early in his career and teaching him the art of French pastry.

During a trip the pair took to Paris, Wei said, he made a promise to Emmanuel that if he ever opened his own shop, he would share the recipes Emmanuel had taught him.

“I miss him, of course, because he passed away quite young, and I still had a lot to learn from him, but unfortunately I can’t,” Wei said.

“But I just have to keep my promise and the memories we made in France.”

The reception to the new Whisked the Right Way has been positive, with the Swanbourne community being very receptive to the French creations sold by the store.
