Sydney cult favourite cookie brand, Butterboy, has officially unveiled its Byron Bay store.

The store marks its first permanent location outside of the Harbour City, and will be home to the NYC-style cookies Butterboy has become synonymous with.

The brainchild of James Sideris, who began creating cookies and muffins in his home kitchen while studying, Butterboy was initially a wholesale business, supplying local cafes. However, as the chunky cookies began to grow in popularity, James’ attention shifted and the first store opened its doors in Manly in 2022, and a further four stores soon followed.

Butterboy has become renowned for its signature flavours, which include double choc; salted caramel and macadamia; milk chocolate; and snickerdoodle. The newest Byron Bay store will also have special release cookie flavours on release, including Lotus Crunch, which is a choc cinnamon dough with Lotus Biscoff chunks throughout. The cookie is then rolled in a biscuit crumb.

Speaking with Broadsheet, James said the newest store location was an exciting change for the company.

“It’s cool… a bit of a different experience opening something that’s not around the corner from everything else,” he said.

“Byron’s definitely always been in our sights… it’s obviously not interstate, but we’d almost call it interstate for us.

“I’m incredibly stoked and happy and proud. It’s been a good effort from the team, and a bit of a long time coming.”
