Brooki Bakehouse heads to Gold Coast

Viral cookie bakery Brooki Bakehouse has headed south and set up shop on Queensland’s Gold Coast.

The new store, which marks the brand’s first in the region, officially opened on June 28, 2025, at Pacific Fair. Although the business is currently housed within a kiosk at the shopping centre, they are still on the hunt for a permanent location.

Brooki Bakehouse has built a name for its NYC-style cookies, cupcakes, brownies and desserts, with lines regularly snaking down the street from its Brisbane headquarters.

Established in 2022, the breand quickly became a viral sensation on social media, thanks in large part to owner Brooke Bellamy’s day in the life videos. Since then the business has gone on to open a further four stores, including the newest Gold Coast location, in addition to an international pop-up store in Abu Dhabi in late 2024 as part of the month-long Mother of the Nation (MOTN) festival.

Speaking with The Courier Mail, Brooki said Brooki Bakehouse had received plenty of support from the Middle East, and had even been in talks regarding franchising opportunities in the region.

“It’s all pretty nuts, but with such an incredible team, everything feels really doable. I just need to step in to solve problems,” she said.
