Give It a Poke!
Poke cakes have been around for a long time, but they are currently enjoying a massive resurgence.
A great idea for bakers in a rush, poke cake are easy and high impact. Simply poke a series of holes in the top of a cake after baking (about 2cm apart) before pouring caramel, chocolate or syrup over the surface of the cake. The result: moist cakes that literally ooze with flavour.
Poke cake recipes currently doing the rounds include a carrot with dulce de leche sauce, chocolate cake with Guinness cream, and yoghurt and lemon cake with passionfruit coulis.
